I have made these bars THREE times now with the intention that I would blog about them. I almost had to make them a FOURTH time as they get eaten as soon as I make them!!! AHHH!
So, I quick pulled out, and snapped a picture…and you know what, about a half an hour after this, they were gone.
These are Pumpkin Cream Cheese Bars. They aren’t overly pumpkin-y and aren’t over cream cheese-y. Perfect. They aren’t super rice so that’s perfect too.
I found a recipe in a magazine that Mary Jo, a blog reader, gave to me after I had my thyroid removed. The magazines got stashed away in my sewing room and I unearthed them in the great clean up and found this recipe to try. YUM. Carver loves them too.

I try a lot of recipes. Some don’t make it to the blog. The rule is if I want to continue to make them, the recipe is on the blog…that way I don’t loose it and my kiddos can find the recipe too! No calling mom and asking for the recipe as the answer always is…CHECK THE BLOG!!

How do you think they would be if I left out the pecans? My granddaughter is allergic to all tree nuts. Would the recipe need something else crunchy substituted?
