The grocery shopping has gotten a little behind. Â Actually we’ve gotten groceries..it’s just that I haven’t gotten groceries lately. Â Often Kalissa will be in town and say – “Hey I’m going to the grocery store..need anything?” Â Well I hate to give her a big long list so I tell her the top 5 things. Â Then towards the end of the week Hubby does that same thing. Â I’ve loved it. Â I, myself, Â haven’t had to go grocery shopping in over three weeks. Â That’s all good and dandy but at some point I really need to go get the items that are further down the list.
Hubby and I have gotten into a habit of having dessert at about 8:00 at night. Â It’s a bad habit and doesn’t happen every day. Â His favorite thing to have is a cake in a cup. Â This recipe is a family favorite. (Find the recipe here) Â I love the recipe because it makes just the right amount for the two of us to split.
The other night I was in the mood for a cake in a cup..I went to the cupboard. Â UGH. Â No cocoa. Â That’s when I remembered that we didn’t have cocoa…Hmmm. Â That made me remember the cookie in a cup recipe. Â I typically use chocolate chips but was out of them too. Â Well I did have M&Ms so that was the plan. Â Cookies in a cup with M&Ms in the cookie. Â That sounded like a good plan.
I mixed everything up using this recipe…
Spray a cup or bowl with cooking spray. Â Add.
1 Tablespoon melted butter
1 Tablespoon white sugar
1 Tablespoon brown sugar
3 drops vanilla
1 egg yold
1/4 cup flour
2 Tablespoons chocolate chips (or in my case mini M&Ms)
Stir and put in the microwave 40-60 seconds.

We have enjoyed these often when we wanted something quick and didn’t have time for something to bake a long time. Â We have made two at a time doubling the recipe and using a whole egg.
I like mine with ice cream on the top…but of course we were out of ice cream. Â We must have Reddi Whip. Â Nope. Â THAT’S IT! Â I am going to get groceries!!

If you have to go back to La Crosse for your checkup – there is the River Road Quilt shop that is near the hospital.
