Cookie in a Cup

The grocery shopping has gotten a little behind.  Actually we’ve gotten groceries..it’s just that I haven’t gotten groceries lately.  Often Kalissa will be in town and say – “Hey I’m going to the grocery store..need anything?”  Well I hate to give her a big long list so I tell her the top 5 things.  Then towards the end of the week Hubby does that same thing.  I’ve loved it.  I, myself,  haven’t had to go grocery shopping in over three weeks.  That’s all good and dandy but at some point I really need to go get the items that are further down the list.

Hubby and I have gotten into a habit of having dessert at about 8:00 at night.  It’s a bad habit and doesn’t happen every day.  His favorite thing to have is a cake in a cup.  This recipe is a family favorite. (Find the recipe here)  I love the recipe because it makes just the right amount for the two of us to split.

The other night I was in the mood for a cake in a cup..I went to the cupboard.  UGH.  No cocoa.  That’s when I remembered that we didn’t have cocoa…Hmmm.  That made me remember the cookie in a cup recipe.  I typically use chocolate chips but was out of them too.  Well I did have M&Ms so that was the plan.  Cookies in a cup with M&Ms in the cookie.  That sounded like a good plan.

I mixed everything up using this recipe…
Spray a cup or bowl with cooking spray.  Add.

1 Tablespoon melted butter
1 Tablespoon white sugar
1 Tablespoon brown sugar
3 drops vanilla
1 egg yold
1/4 cup flour
2 Tablespoons chocolate chips (or in my case mini M&Ms)

Stir and put in the microwave 40-60 seconds.

We have enjoyed these often when we wanted something quick and didn’t have time for something to bake a long time.  We have made two at a time doubling the recipe and using a whole egg.

I like mine with ice cream on the top…but of course we were out of ice cream.  We must have Reddi Whip.  Nope.  THAT’S IT!  I am going to get groceries!!

  1. I was just thinking that you might want to treat yourself to a trip to a quilt store. If you have to go back to La Crosse for your checkup – there is the River Road Quilt shop that is near the hospital.
