A bit ago a message popped up from Kalissa.  “I looked on the blog and there is no recipe for Coffee Cake in a Cup”. Hmm. I think she’s right. I checked myself and there wasn’t. So I walked over to the cupboard door and snapped a picture of the recipe and sent it to her. (I love my phone for this!!)
Then a little while later my phone dinged again. Pictures started showing up….This….
Then this….
Then this….
Then came a message that said, “Now you can blog about it”. I smiled. She knows me so well. I know her so well. She wants to help me with a blog post idea but she also doesn’t want to have to keep track of the recipes. My kids all use the blog as their recipe book. They just go to the search bar on the blog and type in what they want to make. It’s a joy of the internet!!
I thought that was the end of it but then my phone dinged again with this….
Carver is trying to give the recipe a “thumbs up” but can’t quite manipulate his fingers. So cute!
So if you’re wondering about the recipe, this is a microwave recipe. It’s SUPER quick. I love it for nights when we want something sweet but I don’t want to take time to dirty the mixer. Being the recipe only uses a half of an egg, I typically make two at a time. This recipe makes only one. Something else to note. I typically make this in a cereal bowl. I’ve made other “in a cup” recipes and my cup has run over in the microwave. Bowls are just safer.
Stir together
1 Tablespoon of softened butter
2 Tablespoons of sugar
Add
1/2 beaten egg
2 Tablespoons sour cream
a few drops of vanilla
1/4 cup flour
1/8 teaspoon baking powder
Stir well.
Then make the crumb topping.
Crumble together
1 Tablespoon butter
2Â Tablespoons flour
1Â Tablespoon brown sugar
1 teaspoon cinnamon
Add to the top.
Microwave about 80 seconds…maybe a touch longer or shorter depending on the wattage of your microwave.

Quick question, which I’m sure is self explanatory since this is made in the microwave but, when you say “softened” butter in your recipes do you mean melted or room temperature soft butter?

We put it in the mircowave and it ends up half melted and half soft. It’s a forgiving recipe Jeri.
One look at Carver’s “mug” and you can tell that “mug cake” is a winner. That smile indicates a lot of happiness.
Looks amazing. May modify using splenda & egg beaters. for my husband who is diabetic & on low sodium cardiac diet.

I am a household that does not use sour cream much. I don’t like buying it for a small amount. Is there something I can use in its place?
I bet yogurt could replace the sour cream

I always use a Corelle cereal bowl for the microwave recipe in a cup recipes too. I think those recipes are so great for satisfying that “something sweet” craving without having a whole pan full of “something sweet” that you know you’re going to eat if it’s setting there.
I will have to remember this for when hubby wants something sweet.
