Chicken Enchilada Soup

Year ago I had joking told my husband, Kramer, if you ever die, I’m going to each soup for most of my meals…I never thought he’d be dying anytime soon, but he did and here I am.  I spoke the truth then as I now eat a lot of soup.  Seriously, I love soup.  He always hated it as it didn’t “fill him up”.

So as I was trolling Facebook the other day I saw a recipe for Chicken Enchilada Soup and knew if I have the ingredients, or I could improvise them enough, I’d be making the soup.

This recipe could easily be improvised to use up leftover turkey from Thanksgiving if you have some.  If you do that, adjust the cooking time to 2 minutes.

The recipe I found was for Crock Pot Soup…well I’m not a Crock Pot Girl.  I’m an Instant Pot Girl but recipes like this are easy to adjust so I did….


Here’s the recipe:
In the Instant Pot put:
1 chopped onion
1 teaspoon Chili Powder
1 teaspoon Cumin
1 teaspoon Garlic Powder
1 19 oz of Enchilada Sauce
1 can of Fire Roasted Diced Tomatoes
1 can of Diced Tomatoes
2 cans of black beans-I only had kidney beans
2 cups water
2 tablespoons of Chicken Better than Bouillon
Chicken Breasts-Put in however much you want.  I like my soup to be meat rich so put in about 5 chicken breast pieces.

I pushed the manual button and hit 24 minutes.  My chicken breasts were frozen.  It yours aren’t, you can hit 19 minutes.  After it was done, I released the pressure, took the chicken out and shredded it.

Then I scooped come into my bowl and added:
shredded cheese
sour cream
a squirt of lime

Optional you could slice up a tortilla and add it so the tortillas act like noodles.  I’m diabetic and need to stay away from carbs if I can so I skipped that but would offer if to guests.

I find that I take my food and if I’m eating supper alone, I eat in the living room in front of the television.  Taking soup isn’t the easiest thing so I’ve learned to take my hot pad holder that has a pocket and slide my hand in and hold the bowl.  Silly I know, but it works!!


The soup was great and who doesn’t like a meal made from start to finish in a half hours time.  It makes a big pot and I’ll be able to have some for a few nights which is awesome.  I love all things Instant Pot friendly.

    re the potholder, have you seen the cute clever bowl holders that are just some fabric squares with a couple of tucks to make it convenient to hold hot bowls ? Fits right into something for someone so clever with fabrics to create.

  2. There are several tutorials on youtube for making microwave bowl potholders. The one from fashion toppings has instructions for three different sizes. I use mine all the time and have made many of them for gifts.
