I have become really comfortable with my pressure cooker. I have gotten to the point I just throw in some ingredients that sound good and see what becomes of them.
This is my latest concoction..Cheesy Chicken, Rice and Broccoli Soup.
This makes a BIG batch…
In your pressure cooker put:
Two raw chicken breast that have been cut up into small bit size pieces
1/2 chopped onion
1 can cream of chicken soup
4 chicken bullion cubes
1 cup raw rice
1 package of frozen broccoli…fresh would work too.
1 can of cheese soup or 1 jar of cheese dip
Fill the pressure cooker to the half way full level with water
Start you pressure cooker out on high. When it starts to whistle, turn it to medium. Set your timer for 15 minutes. Once the timer goes off, take the pressure cooker off the burner. Let the pot sit for 20 minutes. Run the pressure cooker under water and release the pressure. Out comes perfect soup. If it is a bit thick, you can add milk.
There is something SUPER about pressure cookers that makes the tastes and flavors AMAZING.
Sounds like a great recipe. Thanks. I also love cooking in pressure cooker. However, I changed to an electric pressure cooker and love, love it. It has been well worth the investment. I never take it off kitchen counter. It’s always ready to go. I will be trying this cheesy chicken recipe.
