Since farming has been going full force Hubby has been packing his lunch and eating on the go while he works. Â I’ve been trying to have something sweet he can grab and add to his lunch. Â I have some granola or cereal bars just in case I don’t have a baked goodie ready to grab but I’ve been trying really hard to have something here for him. Â I stumbled across a recipe that I had to try-it was just too easy that I had to give it a try.
To make the crust take one cake mix. Â Ignore the directions on the package. Â Add one softened stick of butter and one beaten egg. Â Mix and then press into the bottom of a 9 x 13 pan.
For the cream cheese part mix one 8 oz. softened package of cream cheese, 4 cups powdered sugar and two eggs. Â Pour over the top, spread and bake at 300 degrees for 40 minutes until lightly tan.
How easy right???
I used a chocolate cake mix-the original recipe called for a white cake mix but I’m thinking I’d love to try a pumpkin flavored cake mix in the fall…that sounds yummy! Â I hope Hubby likes them as it’s always nice to have a quick and easy recipe close at hand…ah who am I fooling? Â He’ll love them. Â They have cream cheese in them!
4 cups of powdered sugar sounds like overkill. Is that amount really correct. Definitely not for diabetics if it is. Sounds tasty though.

It’s a good thing my oven doesn’t work. This is another one of the recipes that you have added to your blog that I would like to make. Besides not having an oven, I’m the only one here, so I would eat the entire thing. I enjoy reading the recipes, please don’t stop. Thanks for sharing.
I agree that 4 cups of sugar sounds like a lot. But I bet it would be good to cut the sugar and add some coconut!
I bet this recipe would be good with banana cake mix or even better, Red Velvet!

AND use a carrot cake mix for the base… SIGH….
Use a Supreme strawberry cake mix. And when done drizzle top with strawberry preserves. Or drizzle w some melted chocolate! Yummy. But I do agree with the sugar amount. I’d add the sugar A cup at a time w just the cream cheese. And taste it b4 adding the eggs. And as long as it’s as sweet as you or we like it. It should come out YUMMY.
