When I was trying to put the house back together after the remodeling project, I came across a church recipe book that I forgot I had. I decided to try a few recipes from it…here is Butterscotch Apple Cake. It’s WONDERFUL.
My brother happened to be visiting when I served it and he ask, “Will you be putting this recipe on the blog?”…so brother Jay, this recipe is for you…and whoever else wants some wonderful goodness.
Cream:
1/2 c butter
1 1/4 c sugar
Blend i n:
2 eggs
1 t vanilla
1 c applesauce
Add:
2 c flour
1 t soda
1 t cinnamon
1/2 t cloves
2/3 c butterscotch chips
Put in a greased pan…I used a bundt pan but a 9 x 13 is what the recipe calls for. Bake 30-35 minutes for the 9 x 13…50 minutes for the bundt.
Frosting:
Mix the following in a sauce pan. Heat until the chips are melted. Pour over cake and broil it for 2-3 minutes (honestly only 2 or 3). The frosting burns easily.
3/4 c chopped walnuts (I used pecans)
1/2 c coconut
1/3 c butterscotch chips
1/3 c brown sugar
1/4 c cream (I had skim milk and it worked fine)
2 T butter (margarine worked fine)
A little whipped cream on top and oh my…it’s good. I made this cake two days in a row….and they were complaining that they wanted me to make it again. It’s very moist and appley (yes that’s a made up word)….the frosting is WONDERFUL.

Oh, that sounds really good! We make butterscotch pie in our family but I may have to try this!
