I’ve been trying to make an effort to use some of the things I have in the freezer up. One of the things I pulled out and vowed to use was a bag of blueberries.
I have a standard blueberry muffin recipe that I have used for years and years. The recipe makes a huge batch…and needs a huge amount of blueberries. I decided that I would give a new blueberry muffin recipe a try..one that made a smaller batch and one that used fewer blueberries.
I decided I would take a stack of cookbooks and the first cookbook that had a blueberry muffin recipe with ingredients I had in the house would be the recipe I would try…this is what I came up with.
Here’s the ingredients:
1 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla
1 large egg
2 cups flour
1/3 cup sugar
3 teaspoons baking powder
1 cup blueberries drained
Heat oven to 400. Beat milk, oil, vanilla and egg. Stir in flour, sugar, and baking powder. Stir in the remaining dry ingredients. The batter will be lumpy. Fold in blueberries. Divide into 12 muffin cups. Mix and then sprinkle with streusel recipe below.
2 Tablespoons of firm butter
1/4 cup flour
2 Tablespoons brown sugar
1/4 teaspoons sugar
Mix the dry ingredients together. Cut the butter in. Sprinkle over the muffins. Bake 20-25 minutes until golden brown.
They were really good and it was nice to try a new recipe. I always love muffins with streusel.
I see you used reusable muffin cups. Are these easy to clean after baking with them? Your muffins look really yummy! Thanks for the recipe.
Sounds good now if I only had some blueberries.
