Blueberry Coffee Cake

I’m trying as many recipes as I can from the two cookbooks that blog readers have sent me.  I’ve also been trying to use up things in my freezer.  I had blueberries in the freezer and I had seen this recipe so I decided to try it.  The recipe is Blueberry Coffee Cake.


I mixed it up and the batter looked like this…

I used frozen blueberries and it was just fine.

This is how it looked after I put the topping on.


Here it is fresh from the oven.  It’s not pretty…but…

Oh, my word.  It was super tasty.  Seriously.  It was so good.  I honestly think I’ll be making this more often than I’ll be making blueberry muffins.

Kalissa loved it.  Kelli loved it.  The childcare kids were happy with it.  I had one that didn’t like that nuts were in it.  I think nuts are something that adults like more than kids do.

If I didn’t have all the mouths watering to get a taste of this, I think I would have drizzled some icing on this.  Oh my, seriously….SO GOOD!!

I continue to be excited about the cookbook that a blog reader sent.  THANKS SO much.  I think a cookbook is a gift that keeps on giving.

  1. Oh my that sounds and looks so good! I love blueberries and always like to make something yummy with them if I don’t just eat them with cereal or such. This is a recipe I will need to make. It kind of reminds of the Blueberry Buckle I make, but with nuts, it has to be better!

  3. Thanks for sharing the recipe. I have been hired to do some baking for an assisted living memory care facility (where my mom lived the last year of her life). This looks fantastic. I think our residents would probably enjoy this, so will have to put it on our menu sometime soon.
