You might remember that I told you that there is a gal that comes in twice a month and does food and fitness activities with my childcare kiddos. Twice a month she comes and does food related activities with the kids. Each month features it’s own food. This month the food was beans. On this day, she was talking about dried beans.
I’ll tell you the truth. I was a little skeptical thinking my kiddos would likely turn up their noses and not eat them…or even try them. But surprisingly, they did pretty good.
Here they are mixing up a batch of black bean brownies….I know, that doesn’t sound the best….BUT the kids LOVED THEM!! Kalissa and I liked them too.
The recipe is WAY simple. When I say simple, I mean WAY simple. There are only two ingredients. Here’s the super simple recipe if you’re inclined to give them a try….All you need is one boxed brownie mix and one can of black beans.
Put them in a food processor or blender and mix. Put the batter in a greased 9 x 13 pan and bake them for 18 minutes at 350. THAT’S IT!
I thought I would take a picture of myself eating one to prove they were edible!! For me, I would say they taste slightly different but more like a different that it’s not my normal recipe…not a yuck taste at all!
If you are looking to cut fat, reduce eggs or increase protein, this recipe is a good option.
My kids asked for second, thirds and even fourths!! They are very moist and you’d never guess there were black beans in them.
