Black Bean Brownies

You might remember that I told you that there is a gal that comes in twice a month and does food and fitness activities with my childcare kiddos.  Twice a month she comes and does food related activities with the kids.  Each month features it’s own food.  This month the food was beans.  On this day, she was talking about dried beans.

I’ll tell you the truth.  I was a little skeptical thinking my kiddos would likely turn up their noses and not eat them…or even try them.  But surprisingly, they did pretty good.

Here they are mixing up a batch of black bean brownies….I know, that doesn’t sound the best….BUT the kids LOVED THEM!!  Kalissa and I liked them too.

The recipe is WAY simple.  When I say simple, I mean WAY simple.  There are only two ingredients.  Here’s the super simple recipe if you’re inclined to give them a try….All you need is one boxed brownie mix and one can of black beans.

Put them in a food processor or blender and mix.  Put the batter in a greased 9 x 13 pan and bake them for 18 minutes at 350.  THAT’S IT!

I thought I would take a picture of myself eating one to prove they were edible!!  For me, I would say they taste slightly different but more like a different that it’s not my normal recipe…not a yuck taste at all!

If you are looking to cut fat, reduce eggs or increase protein, this recipe is a good option.

My kids asked for second, thirds and even fourths!!  They are very moist and you’d never guess there were black beans in them.

  1. I made a pork and beans chocolate cake one time. It was good too! We had a ton of leftover beans from a family reunion and it let me use them up :)

    Low Fat rich and fudgy black bean chocolate brownies that are as quick and easy as they are delicious
    Servings:
    Ingredients
    1 can 15 ounces black beans
    1 box around 20 ounces chocolate brownie mix
    1 heaping teaspoon instant coffee powder optional
    1/4 teaspoon ground cinnamon optional
    Instructions
    Position an oven rack in the center and preheat your oven according to the instructions on the box of brownie mix. Spray your baking pan with nonstick cooking spray.
    Open the can of beans, drain and rinse well.
    Put beans back in the can and fill the can with water.
    Put beans, water, coffee and cinnamon (if using) in a blender or food processor and blend until smooth.
    In a large bowl, mix together the pureed beans and dry brownie mix.
    Spread the brownie mixture evenly into the prepared pan.
    Bake the pan of brownies according to package directions.
    Cool and cut into 20 brownies.

  3. That’s not really a healthy alternative. You are removing the protein component, egg, and the fat, which can be healthy and doubling down on the carbs with the beans and brownie mix.

  5. It’s extremely healthier; especially for your heart. By using the black beans you are getting a lot of fiber and protein while avoiding the cholesterol in the eggs. The carbs and fat in black beans are not bad for you. Bad carbs are the ones in such things as processed white bread and pasta.

  6. Beans are a protein, although “incomplete”, Just add a complimentary protein in your meal. and 1 egg spread among 9-12 bars isn’t much protein. Not all carbs are bad.

  7. I made those and brought them to work a few years ago. Although the taste was not bad, the texture was rather “poop” like. Glad you like them though…..
