I was at the grocery store the other day and whole chickens were on sale. Â I am a person who completely plans our menus over what is on sale so I bought two chickens. Â I sure wish I had bought more as it turns out they were only about $4 each! Â I’ve told you we don’t buy a lot of meat as we get lots of beef via Hubby’s job on the farm…but chicken at this price is a treat to the palette and a treat for my pocket book too.
As I was driving home I started planning what I would make with the chicken….chicken enchilladas….chicken soup with biscuits…chicken taco soup…beer can chicken. Â Oh darn. Â We don’t have a outdoor grill anymore. Â No beer can chicken for me…but wait. Â There has to be a recipe to make it in the oven.
Once home I went straight to the computer hoping to find a recipe…and I did. Â This is the recipe I used.
People often talk about how hard it is to cook. Â This recipe takes the excuse right away. Â It was so easy and honestly, anyone can do it….and you don’t need to purchase a little rack to hold the can and the chicken. Â It will balance in place.
Following the recipe I put it in the oven…went to sew…came back, did the next step and then went back to sewing. Â Easy-Peasy! Â In about an hour and a half I had this….
The house smelled AMAZING and even the next morning it still smells good.
This is a PERFECT recipe to serve if having friends over for supper. Â It is so easy and delicious. Â The aroma is awesome and tantalizing as it cooks. Â The cooking time allows for you to prep side dishes. Plus I think it’s about the moistest way to make chicken.

Confession time here….I think I’m going back to the store tomorrow and grabbing a couple more whole chickens too…oh my it was good and I want to make another soon!
Yum! My rule of thumb is to use up meats in 12weeks or less so there is no freezer burn or drying out if in a ziploc bag. For sure go buy more! :-)
