Kelli came home the other day and brought banana muffins with her. It’s kind of funny. Georgia eats bananas…in fact she’s an excellent eater and eats mushed table food. No boughten baby food for her. Well previously Kelli didn’t buy bananas but now she does so now she has bad bananas from time to time. She doesn’t like banana baked goods so if her bananas go bad, she makes them into something and brings it here. LUCKY ME!! I love it.
Her most recent delivery included banana muffins…which Carver LOVED..but wouldn’t cooperate when it came time to take a picture.
All of the kids loved them…me too. Her recipe is only slightly different than mine.

They are super moist and great with chocolate chips in them. The recipe I typically use is THIS from blog reader Anne.
The recipes are both very similar with small adjustments on the butter and flour.
I’m a fan of all things banana. Kramer never was up for fresh bananas. He always said when he ate them they made his throat “scratchy”. It’s odd. Some of our kids say the same thing. I don’t know if you’re call that an allergy or what. All I know is I’m thankful I don’t have it as bananas are one of my favorite go to snacks and I’m well known for buying the rotten bananas at the store just to make baked goods with them.
I haven’t had banana bread in ages! I never thought of adding chocolate chips. The scratchy throat reaction is most likely an allergy. I get that reaction from melons. I will sometimes still eat them, but not often because at any point to reaction could become dangerous.
The recipe looks to be a scrumptious one.Banana bread, banana muffins, banana cake…all favorites. Oddly enough, I’m not a fan of plain ol’ bananas. (Sadly, I’m afraid the itchy throat when eating bananas is a sign of a food allergy…best for those family members to avoid eating them.)
Your picture of Carver is precious. He is adorable. I took a picture of my three grandsons this morning. They weren’t totally cooperative either, but the goofy faces matched the characters wearing them, so I was amused.

Yummy! The itchy throat could be a sign of a banana allergy or also oral allergy syndrome – some fruit proteins are similar enough to other proteins that your body thinks it is reacting to that (ragweed, latex, etc – depends on the fruit). If it is oral allergy syndrome you just need to avoid the specific raw fruit that causes issues – cooking changes the protein enough so that you don’t react.
I was watching a cooking show today and they made French toast using banana bread. It looked good. They made an apple compote to put on top.

I can relate to the kids. I get sores in my mouth when I eat over ripe bananas.
Love that picture of Carver! He is such a ham! I have never heard of a banana allergy but it wouldn’t surprise me! I love anything banana too! Yum!
The smell of Bananas make me want to GAG!!!! I was told I ate them when I was a baby but no! JUST NO…. LOL
I use gluten free flour for my baking and the results often dry out quickly. I add a mashed banana to my standard pan coffee cake batter and then add other fruits I do want to taste, raisins-dates-blueberries. Out of bananas yesterday, I added half a leftover sweet potato, and then my blueberries with lemon juice and lemon zest. Tasty, and the potato adds no taste but makes a creamier batter. Can’t imagine allergy to fresh bananas, as living single now, a banana and yogurt is my daily “lunch.”
I have to chime in on the bananas with some information. My adult son is severly allergic (anaphylaxis) and it started with just an itchy throat (which is considered a mild allergy) when he was a child. Persons with this allergy are also prone to being allegic to laytex so it is very inportant that this is noted on all medical records including dentist.
