Banana Bars with Peanut Butter Frosting

I bought a bag of over ripe bananas.  I do it all the time.  I love all things banana.  I wanted my weekend to be baking free so over nap time on Friday I decided to make banana bread.  There were LOTS more bananas that needed using than just the amount I needed for banana bread so I decided to make some banana bars.

I am so glad I did because these are delicious.

Banana-Bars
I ended up using this recipe for the bars (find it here) but I made up my own frosting recipe.

I love the peanut butter and banana combo flavor so I thought I’d concoct a peanut butter frosting for the bars…oh my word…Yum.

Here’s what I did to make the frosting.

Mix together
4 oz cream cheese
1 1/4 cups of crunchy peanut butter
Soften in the microwave for 90 seconds.

Add
1 teaspoon of vanilla
3 Tablespoons of milk

Mix with mixer.  Add 2 cups of powdered sugar.  Add more powdered sugar if you want a thicker frosting…or more milk if you want it thinner.

Spread on cooled bars.

The bars aren’t fancy…but they are wonderful tasting.  You won’t be able to eat just one!

  1. I love banana too! This afternoon I made a banana cake with cooked frosting, fluffy banana muffins and banana muffins with coconut and chocolate chips! Yum!!! I’ll have to give your banana bars a go when I get some more overripe bananas!

    Bananas are not on the top of my list, but with peanut butter and cream cheese how can you go wrong, I will give them a try.
