The family recently got together. Kelli and Kalissa knew we’d all be here and also knew how hard it is to get all of us to a restaurant so everyone pitched in and made something. I was in charge of potato salad and my macaroni ring salad. (recipe for ring salad HERE). Kalissa brang hamburgers…Kelli brought Apple Pie Muffins.

The original recipe was for Apple Pie Bread but Kelli likes muffins better. I do for the kiddos too.

Apple Pie Bread
1 can apple pie filling, mashed
1 yellow cake mix
4 eggs, slightly beaten
1 cup self rising flour
1 Tbsp cinnamon
1 medium chopped apple
Whisk all dry ingredients , add wet ingredients. Fold in apples. Pour in 2 loaf pans, greased. Sprinkle sugar and cinnamon on top. Bake in 325 oven for 35 to 45 minutes. Cool and enjoy
Kelli modified by putting the batter in her silicone muffin liners (we like these). She also made a streusel by
softening 1/2 butter
adding
1/4 flour
1/4 sugar
1/2 oatmeal
dash of cinnamon
mixing that together and putting on the muffins for a streusel.
Scotty thought the muffins were awesome.
We all decided that a muffin, glass of milk and some grapes were a perfect breakfast.
Seriously..the next time cake mixes are on sale, stock up on yellow cake mixes.
Jo, here is the moistest, light lemon loaf recipe you will ever make.
LEMON LOAF
INGREDIENTS:
1 (18.25 ounce) package lemon cake mix
4 eggs
3/4 cup water
2/3 cup vegetable oil
1 (3.4 ounce) package instant lemon pudding mix
DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
Combine cake mix, eggs, water, vegetable oil, and pudding mix in a large bowl; beat until combined and smooth. (I use an electric mixer). Divide batter between loaf pans.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. (I bake it 55 minutes.)

Those kids are so stinking cute. They really seemed to like those muffins. Glad the muffins were a hit. I’m happy that you were all able to get together. Cherish those gatherings as the kids grow up too fast and then they aren’t so likely to come to family gatherings. Enjoy your time together.
