When I was putting a recipe book back in the cupboard, a piece of paper came floating out of the cupboard (yes, I admit, my recipes are totally unorganized). Â I picked the paper up an noticed that it was a rhubarb recipe. Â Apparently I had saved it from somewhere, but had never tried it.
I Â decided right then and there it was time to try it…oh, am I glad I did!
Here it is with a little dollop of ice cream on top. Â Hubby loves it. Â Son loves it…I love it. Â Typically I am not a huge fan of recipes that use box cake mixes. Â This recipe is the exception. Â Here goes…
Mix up one yellow cake mix following the directions on the box. Â Pour into a greased cake pan.
Put three cups of chopped rhubarb over the top.
Sprinkle one cup of sugar over the top of that.
Pour a pint of whipping cream over the top of that. Â (I only had half and half and that worked fine)
Bake according to the cake mix (mine needed an extra five minutes)….It isn’t really pretty looking when it comes out. Â To serve it, flip the portion upside down. Â Whip cream would be WONDERFUL on this.
The cream and sugar makes a custard like pudding on the bottom of the pan. Â Definitely try this recipe…if you like rhubarb, you’ll love it! Â I would refrigerate it…and it’s even better the next day….yum.

Sounds yummy, but I am not a big fan of rhubarb, do you think I could substitute it for something else?
That sounds good!! I would think you could use any fruit you like. I would just make sure that all juices were drained off the fruit really well. Peaches would be good too!
