I was up early one morning and trolling Facebook. In my feed was a recipe for Creamy Bacon Pea Salad. I’m a huge fan of pea salad. I like mine with hard boiled eggs but this recipe didn’t have hard boiled eggs in it. There was bacon in it though….so I thought about giving it a try.
At our house, I am the salad eater. Hubby…nice guy that he is, is not a salad or a soup guy. He’s a meat and potatoes and bread kind of guy….and desserts. Don’t forget desserts. Me, I’m a soup and salad kind of girl. I like veggies. I love fruit….I do like meat too. Anyway, when I make a salad I know I’m pretty much on my own to eat it. Sometimes I try to sneak a salad in to the childcare kiddos but they aren’t the best eaters of something like that either.
I had bacon that needed to be used…I had some ranch in the frig that the childcare kids don’t like that was bacon flavored so I thought- Hey, I could use both of them up if I make this recipe so I did. Here’s what it looked like.
To me it looked pretty yummy.
Here’s Carver. He was helping me make the salad. The second I put the scraper down he had it and was trying to lick it.
I can’t make a new recipe without giving it a try even if it is breakfast time. So this was my breakfast. I say two thumbs up. I did alter the recipe slightly by adding a little garlic powder…I’m a garlic lover.
