When Kayla was home last she suggested we try roasting the remaining radishes. Â I was pretty skeptical but the radishes needed to be used up so was up to try anything to get them used up.
Kayla cleaned them, put them in a bit of oil then added a little salt and garlic. Â She popped them in the oven in my covered cast iron pan for about 35-40 minutes or until a knife will cleanly poke through them.
I was really amazed at the taste. Â They aren’t hot at all…and honestly, I really liked them. Â They were so good that Kayla and I ate this whole batch in one sitting.
I have made them again since Kayla left. Â I wouldn’t hesitate at all to make them again.
Never tried that before. Interesting.
Hmmm…. that’s interesting. Never ate a cooked radish. Not a huge fan of the raw ones though. But I’ll try most anything once.
I’ve never thought of radishes past a salad……interesting for sure. If we ever have radishes in the garden again hopefully I’ll remember this.
Did you use fresh garlic or garlic powder?
I think I will be buying radishes when I’m at the store next time. I would love to find something else that is low in carbs to eat. I’m getting pretty bored after loosing 80 pounds. Fried potatoes and onions used to be a favorite of mine and radishes just might be a good substitute for them. Thanks!
We are camping and I have two bags of radishes… Guess what I’ll be roasting for dinner tonight!!?? Thanks for sharing this!! I did not know they could be roasted!!
