Rhubarb Cream Delight Dessert

I cleaned the refrigerator freezer a few days ago.  In there I found a bag of frozen rhubarb.  On the outside of the bag is said 3 cups.  UGH.  I wonder what recipe I had in mind for that.  Oh I hate when that happens.  I freeze rhubarb for a specific recipe and then forget which recipe it is.  I put it back in the freezer and forgot about it.

A few days later I had one of my Amish cookbooks out.  It was a childcare day.  I opened the book looking for a recipe and then one of the kiddos woke up and needed help.  I left the book and before I knew it nap time was over and childcare was busy again.

After childcare I was cleaning up.  I decided to put the cookbook away and worry about cooking another day.  I was pooped.  Then I looked at the open cook book and saw the recipe “Rhubarb Cream Delight Dessert”….hmm…the recipe needed 3 cups of rhubarb.  It was destiny.  I decided right then and there to try the recipe-pooped or not- and I’m so glad I did.  It’s AMAZING!

It’s so yummy.  Hubby says I can make it often!  I will.  It’s really a rhubarb cheesecake for the most part.

Hubby is a real cheesecake lover and a real rhubarb lover so this was perfect for him.

The dessert is made in layers.  The first layer is a flour-butter combo.
The second layer is a rhubarb mix.  The recipe said fresh rhubarb and I wish I would have had it.  I ended up having to drain the frozen rhubarb I had. The next layer is the cheesecake layer. The last layer is a sour cream layer…. (Yep.  I forgot that picture)

It sounds like it would be tedious to make with all the layers but it wasn’t as all of the layers can be added while the previous layer is still hot.

So did I entice you enough to want the recipe?….here it is.
As I said…this was so good.  Any cheesecake or rhubarb lover will really like it.  Kalissa stopped by the house and I said -Kalissa, you have to try this!!  She said- no remember I don’t like rhubarb….I said just one little try, I don’t think you’ll regret it.  She did try it and she loved it too!  She ate a whole piece.

I will definitely be making this often this spring when the rhubarb is growing.  Hmmm….I think I might some more rhubarb down in the basement freezer.  Oh my…we might just be having another one of these SOON!

    I love rhubarb and I love cream cheese, but not a fan
    of sour cream. Does the taste of sour cream stand out more than the rhubarb and cream cheese?

    Recipe sounds delicious, but I am wondering about the bottom flour/butter layer not being cooked at least some before the other layers are added. I just did an internet search to see if I could find the recipe somewhere else and I did–Taste of Home magazine had it exactly, including not prebaking the crust. What is the consistency of the crust part in the finished product? Thinking about making it for my sewing group next week. Rhubarb does not grow in Texas and it’s rarely very good quality when we find it in the store, so frozen is the best source here.

    Wondering what to expect when adding the topping to hot dessert, wondering what happens to it. Thinking it would end up along the sides and under the crust?
