My kids are big fans of scotcharoos. I never had a recipe that I liked until about a year ago. The recipe came from the Iowa Farmer Today newspaper. I made scotcharoos a few times and they were gone almost as fast I made them. Then…I lost the recipe. If you saw my method of recipe keeping, that wouldn’t surprise you one bit. I am TERRIBLE at organizing recipes.
Anyway….I found the recipe yesterday and made them.
Don’t they look tempting? One great thing about the recipe is that it is made entirely in the microwave so no heating up the house by using the stove.
Then my next delemia was what to do with the recipe so I don’t loose it again and wa-la a great idea came to me. I would blog about it and put the recipe in the blog so the next time I can’t find the recipe I can read my own blog….how is that for logic?
So here is the recipe for you and me both…
2 cups sugar
2 cups white corn syrup
2 cups peanut butter in a microwavable bowl and heat in the microwave on high for 2 minutes. Stir then microwave for another minute and stir again. Pour in 12 cups of rice krispies and stir together. Spread into a greased jelly roll pan. In another microwavable bowl melt a pack of chocolate chips and a pack of butterscotch chips together for two minutes. Stir until chips are melted. Microwave up to a minute longer if necessary. Spread on bars. Let cool. Cut and serve.
